Pairing Suggestion – Riesling
The slightly sweet and fruity profile of Riesling balances the saltiness of ham and complements the sweetness of honey glaze, creating a harmonious combination.

Ingredients:
- 1 bone-in, fully-cooked ham (about 8-10 pounds)
- 1 cup honey
- 1/2 cup brown sugar, packed
- 1/4 cup Dijon mustard
- 2 tablespoons whole-grain mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Whole cloves (optional, for decoration)
- Orange slices (optional, for garnish)
Instructions:
1. Preheat the Oven:
Preheat your oven to 325°F (165°C).
2. Prepare the Ham:
If your ham has a skin, remove it, leaving a thin layer of fat. Score the fat in a diamond pattern with a sharp knife, about 1/4 inch deep.
3. Prepare the Glaze:
In a saucepan over medium heat, combine honey, brown sugar, Dijon mustard, whole-grain mustard, apple cider vinegar, ground cloves, ground cinnamon, and ground nutmeg. Stir until the mixture is well combined and the sugar has dissolved. Allow it to simmer for 5-7 minutes, or until it thickens slightly.
4. Glaze the Ham:
Place the ham on a roasting rack in a large roasting pan. Brush a generous layer of the honey glaze over the entire surface of the ham.
5. Bake the Ham:
Bake the ham in the preheated oven, uncovered, for about 1.5 to 2 hours or until the internal temperature reaches 140°F (60°C). Baste the ham with the glaze every 20-30 minutes.
6. Optional Decoration:
If desired, stud the scored fat with whole cloves in the diamond intersections for added flavor and decoration.
7. Rest and Carve:
Allow the ham to rest for about 15 minutes before carving. This helps the juices redistribute, ensuring a moist and flavorful result.
8. Garnish (Optional):
Arrange fresh orange slices on your platter.
9. Slice and Serve:
Carve the ham into slices and arrange on top of the orange slices on your platter. Serve with the remaining honey glaze on the side.
10. Enjoy:
